Ingredients

  • • 1 cup chilled jasmine tea concentrate
  • • 2 oz yuzu syrup
  • • 1 oz fresh grapefruit juice
  • • 4 dashes grapefruit bitters
  • • 8 oz chilled sparkling water
  • • Edible blossoms and citrus peel for garnish

Method

  1. 1Fill a mixing glass with ice and add jasmine tea, yuzu syrup, and grapefruit juice.
  2. 2Stir for 10 seconds until well chilled.
  3. 3Strain into two tall Collins glasses packed with pebble ice.
  4. 4Top evenly with sparkling water and add grapefruit bitters.
  5. 5Garnish with edible blossoms and a thin ribbon of citrus peel.

  • • Cold-steep jasmine tea for 6–8 hours to avoid bitterness.
  • • Swap yuzu syrup for honey syrup plus lime zest if unavailable.
