Ingredients

  • • 1.5 tbsp yuzu marmalade
  • • 1 tbsp manuka honey
  • • 6 oz sparkling mineral water
  • • Ice cubes and shiso leaf for garnish

Method

  1. 1Blend yuzu marmalade and honey with a splash of warm water until smooth.
  2. 2Add the mixture to a chilled highball glass with ice.
  3. 3Top with sparkling mineral water and stir gently.
  4. 4Garnish with a slapped shiso leaf for aroma.
  5. 5Serve with a long spoon to recombine as needed.

Bartender notes

  • • Warm the honey slightly to help it dissolve without granular texture.
  • • Swap sparkling mineral water for soda if a lighter bubble is preferred.
